Fajitas
We take pride in our Fajitas by using
our exclusive seasoning rub and slowly
grilling it over mesquite charcoal. The
sizzling fajitas come over a hot comal
with onions, and are served with sides
of cheddar cheese, pico de gallo, sour
cream and our homemade flour tortillas.
Order by the Pound or Half-pound for a
great “make your own” meal. You can
also mix and match any two meats to
create a full pound.

Chicken Fajitas
Fresh skinless chicken breast.

Traditional Beef Fajitas
Classic fajita skirt steak.

Pork Fajitas
Fresh lean tenderloin seasoned pork.

Shrimp Fajitas
Seasoned fajita style shrimp.

Cadillac Fajitas
Our signature tenderloin filet.

Vegetable Fajitas
Zucchini, red & green bell peppers,
onions, olives, and pico de gallo with
jack & cheddar cheese melted on top.

Quesadillas
Fresh flour tortilla grilled with your favorite
ingredients.

Fajita Dilla
Our traditional mesquite grilled beef fajita
with cheddar cheese and green chilies.
Served with guacamole, sour cream, and
pico de gallo.

Pollo Dilla
Mesquite grilled chicken layered with
jack cheese and green chilies. Served
with guacamole, sour cream, and pico de
gallo.

Pico Dilla
Simple and tasty with cheese, avocado,
pico de gallo, and olives. Served with
guacamole, sour cream, and diced
tomatoes.

Seafood Dilla
Filled with blend of shrimp, crabmeat and
cheese. Served with guacamole, sour
cream, and pico de gallo.

Southwest Specials

Fiesta Pollo
Mesquite grilled chicken breast topped
with melted cheese, tomato and green
onions. Served with fresh corn on the
cob, dinner salad, and charro beans.

Pollo Con Queso
Mesquite grilled chicken breast topped
with our chili con queso and served with a
cheese enchilada and grilled zucchini.

Grilled Shrimp & Vegetables
½ pound grilled shrimp with seasoned
and mesquite grilled red & green bell
peppers, yellow squash, zucchini,
mushrooms, and carrots. Served with
sides of garlic butter, mexican rice, and
ranch dressing

Salmon
Mesquite grilled salmon topped with
cilantro butter. Served with a side of
grilled zucchini and Mexican rice.

South of the Border
Served with mexican rice & refried beans

Border Dinner
A traditional combination of two cheese
and onion enchiladas, one beef taco,
dinner salad and small chili con queso.

Dos Taco
Two machaca beef or machaca chicken
soft tacos topped with chesse, lettuce,
and diced tomatoes.

Border Burrito
Machaca beef with refried beans, onions,
tomatoes, and mild green chilies rolled
in a flour tortilla and topped with our chili
con queso sauce and sour cream.

Carne Asada
Mesquite grilled tenderloin steak, topped
with salsa, served with one cheese and
onion enchilada, and guacamole salad.

Enchiladas

Traditional Enchiladas
Rolled in corn tortillas and served with
mexican rice and refried beans.

Three types to choose from:
Beef with cheddar cheese
Chicken with jack cheese
Jack & cheddar cheese with onion.

Enchiladas Guadalajara
Spicy beef, onion, cheddar and jack
cheese, layered in corn tortillas and
topped with sauce, black olives, cheese
and sour cream. Served with mexican rice
and refried beans.

Enchiladas Verde
Fresh sautéed spinach, rolled in
homemade flour tortillas, topped with
savory monterey jack cheese sauce.
Served with mexican rice and refried
beans.

Seafood Enchiladas Fajitas
Shrimp, crabmeat, and cheese rolled
in corn tortillas and covered with our
seafood sauce, topped with swiss
cheese. Served with mexican rice.

Fiesta Lites

Mixed Grill of Vegetables
Seasoned and mesquite grilled red
and green bell peppers, yellow squash,
zucchini, mushrooms, carrots. Served
with Ranch Dressing

Taco Salad
Choice of fajita beef or fajita chicken
breast over a bed of mixed greens in a
tortilla shell with cheese, black olives and
sour cream.

Baja Salad
Marinated and mesquite grilled chicken
breast over mixed greens with avocado,
diced tomato, cheese, cucumber, olives
and sliced boiled eggs

Tortilla Soup
A colorful soup prepared with a variety
of fresh vegetables served over corn
chips and jack cheese. Add fajita chicken
breast, avocado, or mexican rice for an
additional charge.
